Handling and Cooking Instructions
Thawing: Keep Frozen at 0ºF (-18ºC). Allow lobster tails to thaw in a refrigerator for approximately 3 hours. Be sure to thaw completely before cooking. Cooking: In a large pot add ½ inch of water along with one to two tablespoons of salt and bring to a boil. Once boiling, place tails in pot and steam for 5 to 8 minutes. To broil, carefully cut or split tail down the middle with kitchen shears or a sharp knife and place on a broil rack for 8 minutes. Note: Cooking times may vary due to methods and equipment used. The color of the meat should change from translucent to white. For best results, do not overcook.
The lobster tails can be served in a variety of ways. Steamed: Steam per instructions above and serve with melted butter and lemon — an absolutely delicious New England style treat. Lobster Salad: Steam per instructions above, cool and remove tail meat from shell. Chop meat and mix with a small teaspoon of mayonnaise, lemon, salt and pepper. Surf & turf: Steam per instructions above and serve with your favorite cut of beef. Grilled: Carefully cut or split tail down the middle with kitchen shears or a sharp knife and place on pre-heated grill for 6-7 minutes, shell side down.
